Our story

It started with a shared interest between our head baker, Kris, and I, Emma. We've been working together for years, and always had a share passion for pushing the boundaries when it comes to baked goods. It started from a classic caramel slices, to brown butter cookies, basque burnt cheesecake, and we ended up diving deep into the art of pastries. 

 

We were at our old cafe, things were slow during COVID, and we saw it as an opportunity to try new things and experiment with cool ideas. We were really lucky, the pastries (cinnamon cruffin & pistachio croissant) were a hit from the start. Soon I realized we've grown out of the cafe we were in. Taking a leap of faith, I found a small dedicated site for MIBO to grow. We were welcomed by the community straight away. 

 

We were (and still are) constantly tweaking our recipes to reach perfection. Eventually, our growth outpaced our four walls once again. I found the site in Wynyard and moved our kitchen in. It's a huge risk again, but at the same time, we're able to bake without limits once again.

 

Opening the Milford store was a natural move for mibo, it felt meant to be. We realized that so many of our regulars and our own team members call the Shore home. Bringing our third store to Milford was our way of coming to our community there, and it’s been the perfect next chapter in our journey.

Where we are today

mibo has grown over the past four years, and so has our community of patrons who enjoy our food. What began as one pastry and coffee shop now extends across Auckland into three locations, events & pop-ups, and most recently–catering services.

Our customers first found us through our best-selling pistachio croissant & cinnamon cruffin, brightening their morning commute to work. As time has gone on, those same visitors have turned into regulars. Our pioneering treats paired with our commitment to tranquility, connection, and quality keeps them coming back time after time. 

 

Now, everything our community loves about MIBO can exist in your spaces as well as ours…

Bringing mibo to you

The mibo trajectory began from a place of wanting to share our passion for baking and creative flavours. As we grew, it became clear that our love encompasses more than just making delicious food. The people have become our passion, too.

 

Once we realised our affection for bringing joy to people's lives, we began to explore how we could do this on an even more personal level. Catering across the city felt like the natural answer.

 

With both bespoke and set menu options, we now supply offices, product launches, private events, and personal celebrations with the same items our customers first fell in love with at the counter!

Meet the mibo team

We couldn’t tell the truth of our story without mentioning our mibo team... No success is ever accomplished alone, and we are no exception. 

 

The mibo team is filled with talented baristas, bakers, chefs, and servers, whose work has allowed our bakeries to flourish into what they are today. All three of our stores are always staffed by the most amazing teams, who show up day after day to serve your favourite treats packed with love you can taste in every bite.


Whether you’ve been with us since the beginning or have just found us recently, we would bet that your time with mibo has been filled with positive energy, delicious meals, and a space to appreciate the quiet moments. That is the cornerstone of who we are, and it becoming the reality of mibo is only possible thanks to our team.

mibo may be a multi-location artisanal bakery in Auckland, but we still test and tweak all of our recipes to ensure every customer has something to love. Our passion has always been to bring creativity and curiosity into our kitchen, and your life.

 

What started as two people filling their time with pastry experiments during a quiet season has grown into a team, community, and bakery that understands the joy to be found in the small moments.
